Ingredients
3-4 sprays non-stick pan coating
1 4oz. boneless/skinless chicken breast
1 large tomato - diced
1/2 large green pepper - diced
1/4 medium sized white onion
2 tbsp green olives - sliced
1 tbsp Italian dressing
1 tsp lemon juice
1/2 tsp salt
1/4 tsp granulated garlic
1 tsp Italian seasoning
Preperation Instructions
In a small skillet, add 3-4 sprays of pan coating and place over med heat. Once your pan is hot, throw in your chicken breast. Season however you like. You can't go wrong with salt, pepper and garlic - maybe even some lemon juice or a dash of white wine. Lightly brown both sides and cook until firm, but still juicy. Remove from heat and cut into strips or cubes, which ever you prefer. Place cut chicken in refrigerator to cool - it should be served cold in your salad. Next, wash and dice your tomato, green pepper and onion.
Instructions
Now place all ingredients into a large salad bowl and toss together until your lemon juice and Italian dressing are evenly coating your veggies and chicken. Chill and serve. If you can afford the extra calories, this salad also tastes great with fresh, cubed mozzarella. Then you could almost call it a pseudo caprese salad!
