Ingredients
3-4 sprays of non-stick pan coating
2 bunches of broccoli
1 cup of sliced baby carrots
1 tsp fresh minced garlic
15 sprays of "I can't believe it's not butter"
1 tbsp lemon juice
3 tbsp grated Parmesan cheese


Preperation Instructions
Wash broccoli and carrots ( we prefer to use a vegetable wash to remove dirt and wax from the store ). Then cut broccoli bunches into smaller pieces- use the whole thing ( stems and florets ), but cut both stems and florets into smaller pieces. Then slice your baby carrots lengthwise into thin strips. Preheat your oven to 400 degrees.

Instructions
Coat pan lightly with non-stick pan coating. Mix broccoli and carrots and lay evenly across the pan. Next, drizzle lemon juice over the top of your veggies. Then spray veggies with "I can't believe it's not butter". If you don't like this butter, you can brush your veggies with extra virgin olive oil or a butter substitute, but it will increase the amount of calories per serving. Next, sprinkle grated Parmesan over the top of your veggies. Place your pan on the middle rack of your oven and cook for 15-20 minutes until the tips of the broccoli start to brown and carrots are tender. Remove from oven and serve.

Thanks! I used to do this with my potatoes... I would cut them into wedges and sprinkle parmesan, garlic, and cajun on them... They took about 45 minutes to cook though.

Have you tried cherry tomatoes and jullienne onions like this... with a bit of oregano or dill on them? yummm...

now I am getting hungry!

keep an eye on the tomatoes... they are best when the skin still has a little spring in it.

and add some garlic cloves too.... those are my favorite.
if you roast the garlic in the bulb.. just cut a 1/4 inch off the top and roast 20 minutes at 250*.. with a drizzle of oil...

ok.. really getting hungry now.. and I have 2 bulbs sitting in the counter .... hmmm....
