3-4 sprays non-stick pan coating
2 - 4oz. boneless, skinless chicken breasts
2 oz. low-fat cream cheese
5 whole mushrooms
1 chicken flavored bouillon cube
3 tbsp corn starch
1 cup water
salt, pepper, & garlic powder to taste
Thinly slice your mushrooms and set them aside. Wrap your cutting board with plastic wrap. Lay down one chicken breast, smooth side down, and cover with another sheet of plastic wrap. With meat tenderizer or mallet, pound chicken out nice and thin without breaking smooth side or tearing holes. Repeat process for other chicken breast. Once complete, remove plastic wrap from top side of breasts and place one ounce of cream cheese in the middle of each breast. Next, take about 1/4 of your sliced mushrooms and lay them on top of the cream cheese. Then fold breast closed and use a toothpick to keep the ends closed while cooking.
Spray a large skillet with 3-4 sprays of non-stick pan coating. Place pan over medium heat. Once pan is ready, brown each side of chicken breasts ( approx 2-3 minutes per side ). Next, using a little water, deglazed your skillet to get everything off the bottom. Many types of vinegars and wines can also be used to deglaze your skillet. Experiment to see which one works best for you, but if using wine, be sure to add the calories to your recipe. Once deglazing is complete, add 1 cup of water and bouillon cube to skillet. Bring to a simmer and add corn starch. Using a whisk or spoon, stir rapidly until sauce starts to thicken ( chicken breasts can be removed during this process to ensure smoothness, but return them to the pan immediately ). Next, add the rest of your mushrooms to the skillet, cover, and let simmer for about 10 minutes until your chicken is cooked all the way through. Once chicken is thoroughly cooked, remove from heat and serve. This dish is also good served over rice, but those calories are not figured in below so do the math if you need to. Add salt, pepper and garlic powder according to taste and don't forget to remove the toothpicks!
