Ingredients
1 bag triple washed spinach or baby spinach
1 pint strawberries, hulled, washed and sliced lengthwise
1/2 cup shredded or crumbled mozarella or Italian blend cheese
1/4 cup sliced toasted almonds (optional); walnuts or pecans also work

Dressing:
1/4 c. orange juice
3 T. red wine vinegar (can substitute balsamic vinegar)
1 T. honey or raw sugar
1 T. olive oil
1 t. orange zest
1 t. poppy seeds
1/4 t. salt


Instructions
Toss together salad ingredients. Wisk together dressing ingredients; refrigerate. Just before serving, add dressing.

Can I substitue regular lettuce for the spinach (my muscles are big enough) and sesame seeds for the poppy seeds ?? And I do prefer honey over raw sugar thanks ! ; )

Not aspiring for the Popeye look eh DD??!! Well, you're the one who posted the "modifying recipes" blog. Do you even need to ask ; )
Although stick with leaf lettuce; mesculun (mixed baby greens) would be a good choice. I'd suggest avoiding iceberg - the least nutritious of all lettuces. Sesame seeds are good for you; maybe even add 1/4 tsp sesame oil to the dressing! If you're fond of Asian cuisine, try substituting drained canned mandarin orange slices for the berries too.
