1/2 cup pearl barley, 1 1/2 cups boiling water,1/2 cup salsa, 5 whole wheat tortilla, refried beans, fresh cilantro cheddar cheese and jalapenos
Instructions
Add 1/2 cup pearl barley to 1 1/2 cups boiling water in medium saucepan cover. reduce heat to low and cook until barley is tender and liquid is absorbed. Mix barley with 1/2 cup salsa on a whole wheat tortilla spread 3 tablespoons refried beans and 1/3 cup barley salsa mix top with fresh cilantro cheddar cheese and jalapenos sliced or chopped. roll tortilla and bake seam side down at 350 for 10 to 15 minutes.
