Ingredients
Romaine Lettuce
Iceburg Lettuce
1 can hearts of palm
1 can baby corn
1 can tuna
3 hard boiled eggs
1 boiled potato
1/2 head cut brocolli
thinly sliced turkey
2 tomatos cut in wedges
1 cucmber cut in circles


Preperation Instructions
Cut the potatoes in thick wedges.
Cut the hardboiled eggs in half.
Cut the heart of palm in half


Instructions
Mix the 2 types of lettuce and place at the bottom of a large dish.
Top with hearts of palm, tomatoes, baby corn, and brocolli.
In three sections, add tuna, eggs, and turkey.
Place potatoes on top.
You can eithe rmix all together or pick from here and there.
The more you make, the more people you can serve, or make a small salad and divide into 2 or 3 for a few great meals.

This sounds great. I'm always looking for new meal salad recipes, especially when it's too hot to cook or eat hot foods. Where can I find hearts of palm, and if I can't, would artichoke hearts be an acceptible substitute?

I usually buy hearts of palm in cans, pack of 3 at costco. Yes, artichoke hearts are a great addition and/or substitute.

I love artichoke hearts, but I also love trying new foods. I'll look for the hearts of palm next time I'm at Costco. Thanks.

Add some baby spinach and we have ourselves a wonderful meal. I even replace the turkey with grilled chicken

You're right... this is high in protein and fiber! I should check it out sometime. So, what do hearts of palms taste like???
