Ingredients
1 skinless, boneless chicken breast (cubed)
1 Green Pepper (cut in long strips)
1 Red Pepper (cut in long strips)
1/2 spanish onion (diced finely)
12 snow peas
mushroom (optional) (thin slics)
1 Tablespoon olive oil


Instructions
In a skilled, add the olive oil and diced onion.
Add chicken and stir continually.
Once chicken starts to cook, slowly add the other ingredients and stir on medium/low heat until chicken is ready.
Top with chilli peppers if desired and enjoy!


Nutrition Facts
Not 100% sure the specific details, but I did see this on The Biggest Loser, so I am sure it is healthy. It is high in protein and vitamins, and low in carbs.

I love stir-fry...Hmm, could it be because of my ethic background? lol! Anyways, stir-fry is great because there are so many different variations to play around with, with the different protein sources and veggies.
