Ingredients
2 cups cooked, flaked salmon
2 hard-boiled eggs, crushed
1 red or green bell pepper, diced
1 cucumber, peeled, seeded, and diced
1/2 cup chopped onions
4 to 5 tablespoons mayonnaise, or enough to moisten
1/4 teaspoon cayenne pepper, optional
Salt and pepper
1/2 lemon, juiced


Instructions
In a large bowl, gently toss together the salmon and crushed hard-boiled eggs. In another bowl, combine bell pepper, cucumber, onion, and mayonnaise. Add seasonings and stir to combine. Pour mixture over salmon, add lemon juice, and toss lightly to combine.

I love Salmon. What a good idea! Ryan...I did tuna fish for years. My body will no longer except it. Seriously, when I was a poor college student I'd crack open a can and eat it plain with a plastic fork. It gives me chills just thinking about it!

Instead of my usual tuna fish salad, i'm gonna give this a whirl... I never even thought to make salmon salad. I'll give it a rating next week.

I really like this one b/c I can make it at the beginning of the week and prepare it for lunch over lettuce and dinner with bow-tie (whole wheat) pasta. Sometimes its great in the afternoon with a few crackers!! Its always great to have this sitting in the fridge after a long day and you can smile when you don't have to be spending a lot of time making something to eat for dinner!
