Ingredients
• 2 1/2 lbs. ground turkey breast
• 3 whole eggs or 6 egg whites
• 3 chopped garlic cloves
• 1 medium chopped Spanish onion
• 1 1/2 tsp of black pepper
• 1 tsp of salt
• 1/4 cup grated Parmesan cheese
• 3/4 cup bread crumbs (unseasoned)
• 1 tbsp of chopped fresh parsley
• 1/4 cup of skim milk
• Tomato sauce of your choice
Instructions
Combine the eggs, black pepper, salt, parsley and milk. Mix well. In a large bowl, combine all the other ingredients. Now, wash your hands thoroughly, it's mixing time. Add the egg mixture to the meat slowly, making sure you are mixing the meat well. You may either hand roll or scoop the meat with an ice cream scoop. Being an old fashioned kind of cook, I hand roll my meatballs nice and tight. Once you've rolled all the meatballs, determine how many you want to cook. Place the rest in a Tupperware container in the freezer. You may use these later. Now in a large saucepan, add your favorite tomato sauce. Cover and place over medium heat. When the sauce begins to boil, lower the flame to low and add the meatballs. Cover again and simmer for approximately 40 minutes or until the center of the meatballs reach 160 degrees on your thermometer. Put them aside. Boil your pasta according to package instructions. When the pasta is cooked, strain, place it in a serving dish and cover with the sauce and meatballs.
Nutrition Facts
Substitute the ground turkey breast with ground chicken breast or lean ground beef. This will give you a variety. You can even make all three of them and cook them in the same sauce. If you don't want the pasta, cook some rice and add the meatballs over it. It's a delicious meal and may make you feel better about eating it.
