Ingredients
1 lb. of shrimp, stemmed and peeled
½ cup celery, finely diced
½ cup nonfat sour cream
2 tbsp. lemon juice
1 tbsp. fresh dill
1 tsp. oregano
1 tsp. salt
1 tsp. pepper
8 cups mixed greens
1 tbsp. olive oil
1 cup cherry tomatoes
8 lemon slices


Instructions
1. Chop the shrimp into small pieces and place them in a medium-sized bowl with diced celery.
2. In a separate small bowl, combine the sour cream, lemon juice, dill, oregano, salt, and pepper. Pour this mixture over the shrimp and celery and stir to combine.
3. In a large bowl, toss the lettuce with the olive oil and a pinch of salt.
4. Garnish with lemon slices and cherry tomatoes.
